I love lemons – limoncello, lemon bars, lemon gelato, lemon meringue pie. So today, seeing the little lemon tree leaning over from the weight of all the lemons on it, I decided to make a lemon meringue pie.
I picked a couple of nice big juicy lemons, pulled the sugar and flour out of the cupboard, got a pan down to make the lemon filling in, and proceeded to zest and squeeze, whisk and stir, whip and bake.
The resulting pie was sure tasty!
