      Indeed, Nancy! What I like most about “roasting” veggies is the variety of seasonings that completely change the taste of the dish, even when using the same veggies!

    Looks delish. Don’t overlook roasting on the grill, too, to keep a house (or tiny trailer) cool…

      Hi Barb! I keep looking at small grills and trying to figure out if having one would be a worthwhile addition – my space is so small (65 square feet = 10′ x 6.5′) and I don’t have any place to store it that isn’t already taken up by something else. I do love the taste of grilled veggies, though. Thanks for the suggestion!

    We’re in a travel trailer during the work week near Houston, so I can empathize with not wanting to heat up the trailer with the oven! We microwave almost everything.

      Hi Katy! I imagine that Houston is a bit warmer than the Pacific Northwest and warming up the inside of the trailer would be most uncomfortable! I don’t have a microwave but would use one if I had one! Thanks for commenting!
